Indian Spiced Potatoes

--Ingredients
- 2 tablespoons vegetable oil
- 1 pound potatoes, cubed
- 1 onion, chopped
- 1 clove garlic, minced
- 1 red chile
- 1 teaspoon cumin
- ½ teaspoon turmeric
- ½ tablespoon ground coriander
- ½ teaspoon garam masala
- ½ teaspoon salt
- 2 cloves
- 2 cardamom pods
- 2 bay leaves
- ¼ teaspoon cinnamon
- 5 tablespoons yogurt
- 3 tomatoes, chopped
- 3 tablespoons cilantro or parsley
Method
Microwave cubed potatoes for 2:30 minutes
Add potatoes and onion to oil and shallow fry until browned.
Deglaze with a little chicken stock or water
Add spices
Add tomatoes and yogurt and simmer for 5 minutes
Sprinkle fresh herbs
